The speaker you hear in the lessons is Eoin Ó Conchúir, an Irish speaker from Ennis, County Clare, Ireland. He speaks mainly the Munster (southern) dialect of Irish.
That being said, we don’t specialise in a single dialect. Why? We want to learn Irish (Gaelic) first, and specialise in a dialect later.
